Fancy Sprinkles Founder Lisa Stelly Brought Cool Millennial Branding To The Baking World

Fancy Sprinkles Founder Lisa Stelly Brought Cool Millennial Branding To The Baking World | Fancy Sprinkles

WRITTEN BY TARA BLOCK

Like her company’s signature products, Fancy Sprinkles founder and CCO Lisa Stelly’s veneer is a unique blend: fun and colorful, edgy and cool. A little naughty even. But behind the pink-haired, sequin gown-wearing persona you see on social media, Lisa is about substance as much as aesthetics — and that goes for her sprinkles, too.

Stelly, an entrepreneur and mom of three girls, has gone through some shit and come out the other side more confident than ever. In fact, it was during a low point in her life that she began her sweet journey to success.

“After my second daughter was born in 2015, I had really bad postpartum anxiety and depression,” said Stelly. “I was looking for things to just make me feel better, something that I could do that had nothing to do with being a mom. I really just wanted a hobby that was mine and mine alone.”

After falling down the rabbit hole of cake decorating videos on Instagram (look, we’ve all been there), Stelly discovered a hobby that channeled her artistic interests, minus the scrutiny of more subjective art mediums. “I can look at a painting and go, ‘wow, that’s just magnificent,’ and someone else can look at it and go, ‘I don’t get it,’” said Stelly. “No one looks at a cake and says, ‘I don’t get it.’ With a beautifully decorated cake, you look at it and go, ‘OMG that’s amazing, I wanna eat it.’”

Stelly has her daughter’s “very specific” birthday cake request to thank for her first foray into cake decorating. Stelly binged some YouTube tutorials, bought the necessary tools, and to her surprise, she pulled it off.

She was hooked, and it wasn’t just about finding an enjoyable hobby. For Stelly, this was a turning point in her road to the self-assurance she’d need down the line to launch Fancy Sprinkles. “I was instantly addicted to it. I got such good, positive feedback that I really needed at that time.”

LISA’S “AHA” MOMENT: SPRINKLES SHOULD TASTE GOOD

“Why sprinkles? There was this huge white space in the market and all the sprinkles in the market were gross and boring. Our stuff is delicious and beautifully packaged. It tastes good.”

— Lisa Stelly

Millennials understand the value in aesthetics. We are, after all, the Instagram generation. So if we gravitate toward beautifully packaged beauty brands, alcoholic beverages, and eyeglasses, why wouldn’t that expand to baking ingredients?

You don’t have to be a professional baker to understand what Stelly’s talking about when she said the sprinkles she’d see at grocery stores and craft stores didn’t feel “aesthetically relevant.” Beyond the less-than-appealing branding, have you ever tasted traditional sprinkles before? At best, they’re flavorless. At worst, they’re disgusting.

“Sprinkles typically are pretty mushy, they look stubby, they’re kinda waxy, and they don’t really have any flavor,” Stelly said. “I’ve never gone to an ice cream shop and gotten sprinkles on my ice cream. Not once in my life.”

It wasn’t until Stelly was traveling in Europe that she discovered the holy grail — beautiful sprinkles that tasted really good. “They were crunchy and sweet,” said Lisa Stelly. “I was like, these are delicious, why don’t they taste like this in America?”

A fruitless hunt for a white star-shaped sprinkle for a 4th of July Cake and hours of internet research later, Stelly learned two important things: there was a huge white space in the quality cake decorating products market and the key to delicious sprinkles was powdered sugar as the first ingredient, not wax and cornstarch. Armed with this knowledge, Stelly started ordering small quantities of sprinkles from Europe and Canada that “looked the prettiest and tasted the best.” She’d mix them together into her own color palettes and schemes.

(Gold Digger Sprinkle Blend)

“I put them on some doughnuts for a friend, and my friend, who is also an entrepreneur, was like, ‘You should sell these.’ I was like, ‘The doughnuts?’ And he was like, ‘No, sell these sprinkles.’”

With this vote of confidence and support from another entrepreneur friend, Stelly learned how to make a website and photograph her products, and she hit the ground running. “I was just like, OK, so am I doing this? It was very weird,” said Stelly. “It all happened so fast, and once I started I became completely addicted.”

In fact, Stelly underestimated just how fast Fancy Sprinkles would progress. “Whenever you have a product in a very niche space that has been underserved and there’s not a lot of competition, you can blow up really fast. And that’s exactly what happened,” said Stelly.

(Rose Gold Sprinkle Blend)

In just two months, Fancy Sprinkles made the amount of money Stelly had projected for the entire first year. The day she moved the company into its first space of its own she realized it was already too small, and they had signed a two-year lease.

“I thought, this’ll just be something fun that can be a hobby for me, and maybe I’ll make a little money and I can take my family on vacation and do something nice for them,” said Stelly. “I wasn’t expecting what happened over the next four years.”

SPRINKLES IN BEEF STEW AND EDIBLE EYESHADOW: THE ALLURE OF FANCY SPRINKLES

“GLITTER ON FOOD JUST FEELS NAUGHTY."
— LISA STELLY

(Ruby Red Prism Powder®)

Besides online shopping for Justin Bieber’s wardrobe and binging The Crown, curating and naming sprinkle blends is one of Stelly’s favorite activities. From “peachy kween” to “animal crackers,” “purple pony party” to “unicorn barf,” every sprinkle blend Stelly thoughtfully curates gets its own photo shoot with art direction based on the name’s theme that may or may not be obvious to the customer.

“I’m inspired by the weirdest things at the most random moments,” said Stelly. “One time I was watching Mickey Mouse Clubhouse with my daughter, and Mickey walked into this gemstone castle. I was like, I love that color palette. So I made a sprinkle blend based off of it.”

While Stelly could predict that bakers would be obsessed with her sprinkle blends, she wasn’t prepared for just how much people would freak out over the brand’s other uber-popular product: Prism Powder. These colorful, edible glitters might have been your gateway drug into Fancy Sprinkles. After all, the targeted ads on Facebook and Instagram are sure to stop you in your tracks. Swirling, pearlescent pink Champagne. Glistening cherries. Pots of iridescent glitter that look more like loose eyeshadow pigment than something you could actually eat.

(Champagne Rose Gold Prism Powder®)

“I’ve seen edible glitter before, and you’re like, that doesn’t look like glitter; it’s a little lackluster,” Stelly said. “So when we developed Prism Powder, my main thing was that it has to look like real glitter. It took a while, but we got it down, and it really does look like actual glitter!”

Stelly added, “We quickly learned that people LOVE putting it in their drinks. It became this whole beast that we weren’t expecting just based on who was buying it. Some people don’t bake, but they wanna make things fancy.”

Speaking of unpredictable outcomes, one Fancy Sprinkles usage Stelly didn’t see coming: sprinkles on beef stew. When I asked her about the weirdest ways customers use Fancy Sprinkles, she shared this parenting hack:

“I had a customer say, ‘I just want to thank you because I put sprinkles on my daughter’s beef stew last night and that was the first time she ever ate beef stew. She’s four, thank you so much.’ We have parents just put like four sprinkles on a whole meal and the kid will eat it because it has sprinkles on it. Everybody wins.”

Lisa's Little Secrets

Lisa's Little Secrets | Fancy Sprinkles

WRITTEN BY TARA BLOCK

Fancy Sprinkles founder Lisa Stelly is no Martha Stewart. For example, there’s the whole doesn’t-like-to-bake thing. This might seem surprising, considering she loves decorating cakes, so much so that she started her own sprinkles company. But Stelly is a bit of an enigma, wrapped in a Taco Bell burrito, inside a DaBaby shirt. Keep reading for that to make sense!

TARA BLOCK FOR FANCY SPRINKLES MAGAZINE: WHAT’S YOUR BIGGEST BAKING FAIL?

Lisa Stelly: Probably macarons. Something about me that most people don’t know is that I’m not a good baker. I actually don’t enjoy baking. I enjoy decorating. So most of the time if I make a cake it’s boxed cake mix. I’ve never made a good batch of cookies in my life. I don’t even attempt anymore. I blame my oven. Every time I make macarons they don’t come out right, and I follow everything perfectly. Baking is just kind of frustrating for me, which is why I like the hacks. I like buying a store-bought cake or store-bought doughnuts and just dipping them in ganache and sprinkles. It’s like semi-homemade. I’m not gonna wow anyone. I’m not gonna make, like, a passionfruit ganache tart.

TB: WHAT’S YOUR GUILTY PLEASURE?

Lisa Stelly: McDonald’s.

TB: WHAT’S THE LAST THING YOU IMPULSE-BOUGHT?

Lisa Stelly: I decided to redo my playroom because I hated everything in there and my kids are so messy, so I bought a new rug, couch, and a storage bin.

TB: ARE YOU INTO ASTROLOGY? DO YOU FEEL LIKE YOUR SIGN’S TRAITS ARE ACCURATE?

Lisa Stelly: Absolutely. I’m a Pisces, Sagittarius rising, Taurus moon, and I fit the bill like 100%. But I’m more of a reformed Pisces. I think Pisces, as they get older, have more experience, and go through really bad shit and traumatic experiences, kind of get better. We learn, “you can’t do that, Pisces. You can’t do that anymore.” What we want to do naturally we have to fight against it. I’ve gotten better.

TB: HOW DID YOU HOLD IT TOGETHER MAKING THOSE ASMR VIDEOS?

Lisa Stelly: I didn’t, I was laughing the whole time. I watch ASMR, that’s my dirty little secret. I watch the weird eating videos, the whole mukbang thing. I watch it all, I watch the gross ones where they’re eating live octopus and blood sausage. I don’t know why. I would never eat blood sausage, but I can’t stop watching it. I’m obsessed. The only one that I don’t do is the pimple popping videos. No way. But everything else is on the table. And I was like, our sprinkles would be really good to do ASMR with, and so we decided to film a couple of those videos, and people either love them or hate them. We kinda want to get back into it. We’re thinking about making a whole new channel just for ASMR. It’s really hard to eat all that stuff. You get sick. You have to spit it out. I was shaking from the sugar after. It was bad.

TB: ON A SCALE OF 1-10, HOW COMPETITIVE ARE YOU?

Lisa Stelly: I like to say, I’m like an 8, but everyone who knows me is obviously a 10, you literally try to make yourself better than anyone else in any situation ever. Even if it’s something minor. I’m very competitive.

TB: WHAT’S SOMETHING YOU’RE OBSESSED WITH RIGHT NOW?

Lisa Stelly: Nike.com. I can’t stop buying tracksuits and sweatsuits. Every single night I’m on Nike.com trying to figure out what I can buy myself, what I can buy my boyfriend. They have a whole Air Jordan line that’s like ‘90s colors and I’m dead. For the last three nights, I’ve bought something on Nike.com. So I’d say that’s currently my obsession.

Lisa's Obsession With Nike's Tracksuits & Sweatsuits

TB: FAVORITE COCKTAIL?

Lisa Stelly: Vodka soda.

TB: CAKE OR COOKIES?

Lisa Stelly: Cookies. I don’t really like cake. I only like two kinds of cake, tres leches and a triple berry cream. I don’t really like regular cake. It’s just not my thing.

TB: BINGE OR ONE EPISODE AT A TIME?

Lisa Stelly: BINGE. Oh god.

TB: WHAT ARE YOU CURRENTLY BINGING?

Lisa Stelly: The Crown. Then I’m gonna do The Queen’s Gambit, then I’m gonna watch the Fresh Prince reunion. I love period pieces. I don’t know why. I’ve seen everything. Downton Abbey . . . I’ve even watched all four seasons of Reign on The CW, which is like a teen medieval show that’s like the worst show ever, but I couldn’t stop watching it because I’m just obsessed with period pieces. I think I have a weird fetish with it. It’s very mystical to me.

TB: STORE-BOUGHT OR FROM SCRATCH?

Lisa Stelly: To make? Store-bought. To eat? From scratch.

TB: FAVORITE DESSERT TO MAKE?

Lisa Stelly: Banana cream pie.

TB: FAVORITE COLOR?

Lisa Stelly: Pink.

TB: FAVORITE MOVIE THAT YOU WATCH OVER AND OVER?

Lisa Stelly: The Great Gatsby with Leonardo DiCaprio and Carey Mulligan. I’m so obsessed with it. I’ve seen it like 100 times.

Lisa's Favorite Movie - The Great Gatsby

TB: SONG YOU HAVE ON REPEAT?

Lisa Stelly: “Positions,” Ariana Grande.

TB: FAVORITE VACATION DESTINATION?

Lisa Stelly: I’ve been to Hawaii the most, but I want to go to Mykonos. I just love the idea of Greece. I’d love to go there.

TB: FAVORITE ‘90S HEARTTHROB?

Lisa Stelly: Devon Sawa, Jonathan Taylor Thomas.

TB: HOW WOULD YOU DESCRIBE YOUR PERSONAL AESTHETIC?

Lisa Stelly: Gucci had a baby with Taco Bell. Justin Bieber had a baby with Nike. I’m just very casual, relaxed, but you know, I know what fits me well, and it’s not necessarily about what brand you’re buying. Half the sh*t I own is from Forever 21 or Amazon. I think everyone’s personal style just comes down to what you're comfortable in. Like [points to shirt she’s wearing] this is a shirt that says DaBaby, the rapper DaBaby, and I got this on Amazon because I saw Justin Bieber wearing it.

TB: That’s so on-brand for you.

Lisa Stelly: [Laughing] SO on-brand for me.

Lisa Stelly: The Female Behind Fancy

Lisa Stelly: The Female Behind Fancy | Fancy Sprinkles

On the surface, edible stars and hearts, rainbow-colored candy, and glittering drinks may seem like frivolous little luxuries, but Fancy Sprinkles Founder Lisa Stelly believes that small things make a big impact.

“One time I read a comment on one of our Prism Powder posts, and someone said, ‘why would you put glitter in Champagne?’ They were sort of knocking it,” said Stelly. “This was a few months ago, so we’re still in the pandemic, and my first thought was, why not? Do we really have to explain now that we’re doing little things that make us happy?”

Truly, I dare you to swirl some glitter in your cocktail or top a frosted cupcake with an iridescent sprinkle blend of pearls, crystals, metallic caviar, and shimmering sequins and not feel the corners of your mouth curl up. Beautiful, colorful, and sparkly treats just make people happy, it’s as simple as that. They make you feel, quite literally, like a kid in a candy store.

“I liken our products and the way that adults feel about them to the way children feel when they see a lollipop,” said Stelly. “Or the way my daughters feel when they walk down the toy aisle looking at the Barbies. It’s this wide-eyed, anything-is-possible, life-is-great-and-beautiful feeling.”

Stelly wants her products to elicit those warm fuzzies you feel when you pour sprinkles on your ice cream (or straight into your mouth, no judgment), and beyond that, she wants her products to inspire the Fancy fam to create their own joy.

“There are so many little nuances that our products bring to people, and I don’t think it’s insignificant,” Stelly said. “Cake decorating and the aesthetics of edible arts brought me out of a massive depression that nothing else cured — well, medicine helped — but it really brought me out of something and it gave me so much self-confidence. Once you master your art form or get better at it, it’s really therapeutic.”

Cotton Candy Kiss Cake, Lisa Stelly

It isn’t just about baking something beautiful and delicious, and yet, baking something beautiful and delicious isn’t just a trivial pursuit. There’s nothing “just” about finding happiness in the little things. In fact, it’s what being “fancy” is all about, according to Stelly.

“Sometimes, I go into our factory and I’ll mix sprinkles myself because it’s cathartic for me, and it feels good,” said Stelly. “We post videos all the time of us blending our sprinkles, and people are just mesmerized. They leave comments saying: ‘this is so satisfying, this makes me so happy,’ and you can’t put your finger on it. It’s that feeling of you’re looking good and you see yourself in the mirror and you’re like, damn. You just get that wave of confidence. That’s what I think our products give. Not only are they elite in taste and flavor, but they stand alone in a crowd just based on the way that they make you feel. A product is powerful whenever it can make you feel something.”

For Stelly, this “inspire, create, consume” mission is really at the heart of her work with Fancy Sprinkles as she continues to innovate in the cake decorating and edible arts space. She’s driven by a desire to modernize baking products, creating something that looks as good as it tastes and making the entire experience easier and more approachable along the way. With every product, Stelly takes a step back and asks, why have we always done it this way and how can we make it better?

“So much thought went into these products when I’m developing each single blend, the amount of work I do, the care and the attention to detail that I put in,” said Stelly. “People can feel that in the products, and it feels so well thought out, and that’s because it is. That feeling of joy, that’s what we’re trying to spark over here.”

Now if you don’t mind, I’m going to pour some glitter in my Champagne.
